Summer Salsa

The perfect topper for bbq chicken breast!

Mix all ingredients together & refrigerate for at least 20 minutes before serving.

Serves 2-4


2 Roma tomatoes, diced

1 bell pepper, any colour, diced

½ red onion, finely chopped

1 cup pineapple, diced. Fresh is best but if you need to rely on canned make sure it is canned in water only

½ cup corn kernels (can use fresh or frozen. Thaw before mixing in if using frozen)

2 tbsp finely chopped cilantro (can be substituted with basil if you’re not a fan of cilantro)

2 tbsp olive oil

Juice from 1/2 a lime

Sea Salt & Pepper to taste

Optional: add jalapeno or red chili pepper if you like it spicy!
