
10 Mar Healthy Sweet Potato Skins
Obviously these aren’t the pub-style potato skins you may be used to, but with these you can get some of the same flavours in a healthy meal that you can feel good about!
Ingredients:
2 large sweet potatoes, cut in half lengthwise
1 Large can of Chickpeas
3 cups Cherry tomatoes
4 cups fresh Spinach
1 tbsp Olive oil
1 small yellow onion, diced
1 tbsp Italian seasoning
1 tbsp Chili powder
2 tsp Cumin
Sea salt & Pepper to taste
1 tsp Garlic salt
2 tbsp Avocado oil
Directions:
Cut potatoes lengthwise, rub about 1/2 tbsp avocado oil on each half. Season with chili powder, cumin, and Sea Salt & Pepper
Bake potatoes cut side up for 40 min at 400F, or until you can easily pierce the centre with a fork.
Sautee remaining ingredients in a large pan with the 1 tbsp olive oil . Add the spinach last, once all the other ingredients are heated through. The spinach will only take a couple minutes to cook down.
Once potatoes are cooked through, place a large scoop of the chickpea mixture on top of each piece of potato.
Optional: top with some shredded cheese & hot sauce
