10 Mar Crispy Roasted Potatoes
These crispy potatoes are a bit of a time commitment compared to most of my other recipes, but they are seriously worth it!
1.5 lbs of potatoes, chopped into even sized bites
3/4 cups water
Juice from 1/2 a lemon
1/4 cup avocado oil
2 cloves garlic, minced
1 tsp Italian seasoning
1 tsp thyme
Sea salt & Cracked black pepper to taste
Whisk all liquids and herbs together in your casserole or baking dish. Toss in the potatoes until coated.
Bake @ 425f for 45 min.
Stir, if all the water has evaporated add another 1/2 cup bake for another 40 min.
These potatoes pair nicely with some baked lemon chicken and a spring salad.
