
01 May Couscous Salad
Ingredients
- 1 small package of Couscous (small package is usually around 200 grams)
- 2 cups chopped Kale
- 1 Bell pepper
- 2 Green onions
- 2 clove of Garlic – grated or minced
- Sea salt to taste
- Black pepper to taste
- Lemon juice from ½ lemon
- 2 tbsp Olive oil
Directions
- Cook couscous according to package directions
- Wash kale, remove stem and chop into bite size pieces
- Wash and finely chop bell pepper and green onion
- In large saucepan sautee the garlic, bell pepper and onion in the olive oil until it starts to soften
- Add in chopped kale and stir frequently until it cooks down
- Add cooked couscous and stir
- Add lemon juice, stir
- Season with sea salt and pepper if needed
Serve hot or cold
