Couscous Salad


  • 1 small package of Couscous (small package is usually around 200 grams)
  • 2 cups chopped Kale
  • 1 Bell pepper
  • 2 Green onions
  • 2 clove of Garlic – grated or minced
  • Sea salt to taste
  • Black pepper to taste
  • Lemon juice from ½ lemon
  • 2 tbsp Olive oil



  • Cook couscous according to package directions
  • Wash kale, remove stem and chop into bite size pieces
  • Wash and finely chop bell pepper and green onion
  • In large saucepan sautee the garlic, bell pepper and onion in the olive oil until it starts to soften
  • Add in chopped kale and stir frequently until it cooks down
  • Add cooked couscous and stir
  • Add lemon juice, stir
  • Season with sea salt and pepper if needed

Serve hot or cold
