12 Aug Chicken Stir fry Recipe
This one is super easy to make. All you need is one pan, a cutting board, and knife. Meals that require minimal clean-up are my favourite!
2 Chicken breasts, sliced
1 Bell pepper
4 Green onions
1 small head of broccoli
1 cup snap peas
3-4 carrots, grated or chopped
1 tbsp sesame oil
1 tbsp coconut aminos (soy sauce substitute)
1 tbsp hoisin sauce
1/4 cup water
1 garlic clove, grated or minced
1/2 tsp powdered ginger (if you have fresh ginger, use that instead)
In large wok or frying pan, mix the sauce ingredients over medium heat. Add in the sliced chicken and let cook. Stir frequently.
Once the chicken is almost cooked through, add in all the chopped vegetables.
Let everything cook until the chicken is completely cooked through and vegetables have softened a bit. Stir frequently.
Serve on it’s own, or with brown rice.
Leftovers can be stored in fridge for a couple days, or freeze them for a later date.
